Ingredients

  • 250g cake flour
  • 200g sugar
  • 5 large eggs
  • 10g baking powder
  • 1 pinch salt
  • 300g ripe mangoes (pureed)
  • 150ml heavy cream (whipped)
  • 10g gelatin
  • Fresh mango slices (for garnish)
  • Coconut flakes (for garnish)

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a round cake pan by greasing it.
  2. In a bowl, whisk together flour, baking powder, and a pinch of salt. Set aside.
  3. In another mixing bowl, beat the eggs and sugar until pale and fluffy.
  4. Gradually add the flour mixture to the egg mixture, folding gently to retain the air.
