Ingredients

  • 200g all-purpose flour
  • 100g chilled butter, diced
  • 50g powdered sugar
  • 1 egg yolk
  • 200ml maple syrup
  • 100g brown sugar
  • 50g butter
  • 3 eggs
  • 150g pecans
  • Pinch of salt

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a muffin tin with non-stick spray or by greasing it lightly.
  2. In a mixing bowl, combine 200g of all-purpose flour and 100g of chilled, diced butter to create the crust. Use your fingers to blend until it resembles coarse crumbs.
  3. Add 50g of powdered sugar and 1 egg yolk, mixing until the dough holds together. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Roll out the chilled dough on a floured surface and cut into rounds to fit the muffin tin. Press the dough into the tins.
  5. Bake the crusts for 10-12 minutes or until lightly golden; let them cool.
  6. In a saucepan, mix 200ml of maple syrup, 100g of brown sugar, and 50g of butter. Heat until the sugar dissolves, stirring constantly.
  7. Remove from heat and whisk in 3 eggs until well combined.
  8. Add 150g of pecans and a pinch of salt to the mixture, stirring to combine.
  9. Pour the filling into the cooled tart shells, filling them about 3/4 full.
  10. Bake for 20-25 minutes, or until the filling is set and slightly puffed. Let cool before serving.
