Ingredients

  • 100g flour
  • 50g sugar
  • 50g cold butter
  • 1 egg yolk
  • 2 tablespoons cold water
  • 200ml milk
  • 100ml cream
  • 1 teaspoon cardamom
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 3 egg yolks
  • 30g sugar for custard

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix flour, sugar, and a pinch of salt for the tart shell.
  3. Add cold butter cut into cubes and mix until crumbly.
  4. Stir in egg yolk and a tablespoon of cold water to form a dough.
  5. Roll out the dough and cut into circles to fit your tartlet tins.
  6. Press the dough into the tins and prick the bottoms with a fork.
