  • 150g sponge fingers
  • 200g mascarpone cheese
  • 100g sugar
  • 2 egg yolks
  • 2 egg whites
  • 50g flour
  • 1 tsp baking powder
  • 2 tbsp matcha powder
  • Fresh strawberries for garnish

Instructions

  1. Prepare the sponge fingers by mixing egg yolks and sugar in a bowl until light and fluffy.
  2. Add flour, baking powder, and matcha powder to the mixture, and gently fold until combined.
  3. In a separate bowl, beat egg whites until stiff peaks form, then fold into the batter.
  4. Pour the batter into a lined baking tray and bake at 180°C for about 15-20 minutes.
