Ingredients

  • 500g all-purpose flour
  • 10g instant yeast
  • 100g sugar
  • 10g salt
  • 4 large eggs
  • 250g unsalted butter, softened
  • 200ml milk
  • 100ml heavy cream
  • 4 egg yolks
  • 50g cornstarch
  • 200g peach puree
  • 100g raspberry puree
  • Whipped cream for topping
  • Fresh raspberries for garnish

Instructions

  1. Create the brioche dough by mixing all-purpose flour, instant yeast, sugar, salt, eggs, and softened butter. Knead until smooth.
  2. Allow the dough to rise in a warm place for about 1-2 hours or until doubled in size.
  3. For the custard, simmer milk and cream in a saucepan. Whisk the egg yolks, sugar, and cornstarch together in a bowl.
  4. Gradually pour the hot cream mixture into the egg mixture, whisking continuously. Return to the heat and cook until thickened.
  5. Remove from heat, stir in peach puree and raspberry puree. Let cool completely.
