Ingredients

  • 250g all-purpose flour
  • 125g unsalted butter, cold and cubed
  • 50g granulated sugar
  • 1/4 teaspoon salt
  • 70ml cold water
  • 1 medium pineapple, peeled and sliced into rounds
  • 30g brown sugar
  • 30g tamarind paste
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Prepare the pastry dough by mixing flour, sugar, and salt in a bowl. Cut in butter until the mixture resembles coarse crumbs.
  3. Add cold water gradually, mixing until the dough comes together. Wrap in plastic and refrigerate for at least 30 minutes.
  4. Slice the pineapple into even rounds, and set aside.
