Ingredients

  • 1 cup (200g) unsalted butter
  • 1 cup (200g) brown sugar
  • 4 large eggs
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (240ml) buttermilk
  • 2 cups (480ml) heavy cream
  • 1/2 cup (120g) salted caramel sauce
  • 1 cup (200g) sugar (for brittle)
  • 2 cups popcorn

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare three 8-inch round cake pans by greasing them and lining the bottoms with parchment paper.
  2. In a mixing bowl, cream together 1 cup (200g) of unsalted butter and 1 cup (200g) of brown sugar until light and fluffy.
  3. Add 4 large eggs, one at a time, mixing well after each addition.
  4. In another bowl, combine 2 cups (240g) of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
  5. Alternate adding the dry ingredient mixture and 1 cup (240ml) of buttermilk to the butter mixture, mixing until just combined.
  6. Divide the batter evenly among the prepared cake pans and smooth the tops.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Once baked, let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  9. For the salted popcorn cream, whip 2 cups (480ml) of heavy cream until soft peaks form, then fold in 1/2 cup (120g) of salted caramel sauce.
  10. Once the cakes are cool, layer them with salted popcorn cream in between each layer.
  11. For the crunchy popcorn brittle, melt 1 cup (200g) of sugar over medium heat until it turns golden brown, then mix in 2 cups of popcorn and spread it on a baking sheet to cool.
  12. Top the entire cake with remaining salted caramel sauce and garnish with the crunchy popcorn brittle before serving.
