Ingredients

  • 250g all-purpose flour
  • 1 tablespoon baking powder
  • Pinch of salt
  • 100g cold butter
  • 150g grated sharp cheddar cheese
  • 100g cooked bacon, crumbled
  • 150ml milk
  • 1 egg

Instructions

  1. Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. In a large bowl, combine 250g of all-purpose flour, 1 tablespoon of baking powder, and a pinch of salt.
  3. Add 100g of cold, diced butter and mix until the mixture resembles coarse crumbs.
  4. Stir in 150g of grated sharp cheddar cheese and 100g of cooked and crumbled bacon.
  5. In a separate bowl, whisk together 150ml of milk and 1 egg.
  6. Add the milk mixture to the dry ingredients, stirring just until combined. Be careful not to overmix.
  7. Transfer the dough onto a lightly floured surface. Pat it into a 2cm thick circle.
  8. Cut the circle into 8 wedges and place them on the prepared baking sheet.
  9. Brush each scone with a bit of milk for a golden finish.
  10. Bake for 15-20 minutes or until golden brown.
  11. Remove from the oven and let cool slightly before serving.
