Ingredients

  • 500g puff pastry
  • 200g mixed cheese (e.g., cheddar, cream cheese)
  • 2 tablespoons fresh herbs (e.g., thyme, parsley)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Roll out puff pastry on a floured surface until about 3mm thick.
  3. Cut two circles of pastry, one 25cm and one 20cm in diameter.
  4. Mix together the cheese, herbs, salt, and pepper in a bowl.
  5. Place the larger pastry circle on a baking sheet lined with parchment paper.
  6. Spoon the cheese mixture in the center of the larger circle, leaving a border.
  7. Brush the edges with egg wash for a good seal.
  8. Place the smaller pastry circle on top of the filling and crimp the edges to seal.
  9. Cut decorative slits in the top pastry to allow steam to escape.
  10. Brush the top with egg wash for a golden finish.
  11. Bake in the preheated oven for 25-30 minutes until golden brown.
  12. Let it cool slightly before serving.
