  • 50g sugar
  • 1/4 teaspoon salt
  • 3-4 tablespoons ice water
  • 2 large eggs
  • 200ml heavy cream
  • 50g sugar (for custard)
  • 1 teaspoon vanilla extract
  • 250g fresh strawberries, sliced
  • Balsamic reduction for drizzling

  1. Preheat the oven to 180°C (350°F).
  2. Prepare mini tart pans by greasing them lightly.
