Ingredients

  • 250g all-purpose flour
  • 125g unsalted butter
  • 70g powdered sugar
  • 1 egg yolk
  • 400ml heavy cream
  • 200g cream cheese
  • 100g sugar
  • Zest of 1 lemon
  • Fresh mango for topping
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Prepare a 9-inch tart pan and set aside.
  3. In a bowl, mix 250g of all-purpose flour, 125g of unsalted butter, and 70g of powdered sugar until crumbly.
  4. Add 1 egg yolk and mix until a dough forms.
  5. Press the dough evenly into the tart pan and prick the bottom with a fork.
  6. Bake for 20 minutes or until golden brown. Allow to cool.
  7. In another bowl, beat 400ml of heavy cream until soft peaks form.
  8. In a saucepan, mix 200g of cream cheese with 100g of sugar and the zest of one lemon, and blend until smooth.
  9. Incorporate the whipped cream into the cream cheese mixture gently.
  10. Spoon the creamy filling into the cooled tart crust and smooth the top.
  11. Chill the tart for at least 2 hours in the refrigerator.
  12. Once chilled, arrange freshly sliced mango on top and garnish with mint or other green leaves.
  13. Slice and serve chilled for an invigorating treat.
