Ingredients

  • 250g all-purpose flour
  • 100g unsalted butter, cold
  • 50g sugar
  • 1/2 teaspoon salt
  • 80ml cold water
  • 1 egg (for egg wash)
  • 200ml heavy cream
  • 50g powdered sugar
  • 1 vanilla bean

Instructions

  1. Preheat your oven to 200°C (400°F) and prepare a baking sheet lined with parchment paper.
  2. In a bowl, mix flour, sugar, and salt, then add cold butter. Mix until crumbly.
  3. Slowly add cold water and knead the dough until smooth. Wrap it in plastic and refrigerate for 30 minutes.
  4. Roll out the dough to about 1/4 inch thickness and cut into strips.
  5. Wrap the dough strips around cream horn molds, overlapping slightly.
  6. Brush the layers with an egg wash and sprinkle sugar on top.
  7. Bake for 15-20 minutes until golden brown. Allow cooling on wire racks.
  8. To make the vanilla bean cream, whisk together heavy cream, sugar, and the seeds from the vanilla bean until stiff peaks form.
  9. Carefully remove the cooled horns from the molds and fill them with the vanilla bean cream using a piping bag.
  10. Dust with powdered sugar before serving.
