Ingredients

  • 200g dates
  • 100g mixed nuts
  • 150g cashews
  • 200g blueberries
  • 100ml coconut milk
  • Juice of one lemon
  • Fresh blueberries for garnish
  • Fresh mint for garnish

Instructions

  1. To prepare the crust, blend 200g of dates and 100g of mixed nuts in a food processor until a sticky mixture forms.
  2. Press the mixture into the bottom of a lined baking pan evenly to create a base.
  3. Soak 150g of cashews in water for at least 4 hours, then drain and rinse.
  4. In a blender, add the soaked cashews, 200g of blueberries, 100ml of coconut milk, and juice of one lemon.
  5. Blend until smooth and creamy, scraping down the sides as needed.
  6. Pour the blueberry cream over the crust in the pan, smoothing out the top with a spatula.
  7. Refrigerate for at least 4 hours to set, or overnight for best results.
