Ingredients

  • Vegan tart shells (4-6 pieces)
  • Glutinous rice (200g)
  • Coconut milk (400ml)
  • Sugar (50g)
  • Salt (a pinch)
  • Fresh mango (2 ripe, diced)

Instructions

  1. Prepare the tart shells by preheating the oven to 180°C (350°F) and baking store-bought or homemade vegan tart shells for 10-15 minutes until golden.
  2. While the tart shells cool, cook the glutinous rice as per package instructions until tender.
  3. In a pot, combine cooked rice with coconut milk, sugar, and a pinch of salt. Cook on low heat for about 5 minutes, stirring frequently until well mixed.
  4. Remove the rice from heat and let it cool for a few minutes.
  5. Once cooled, fill each tart shell generously with the coconut sticky rice mixture.
