Ingredients

  • 1 cup raw cashews
  • 1/3 cup maple syrup
  • 1/4 cup coconut milk
  • 2 tbsp matcha powder
  • Pinch of salt
  • 1 cup crushed graham crackers
  • 1/4 cup melted coconut oil
  • 2 tbsp maple syrup (for crust)
  • Crushed pistachios (for topping)
  • Edible flowers (for decoration)

Instructions

  1. Soak 1 cup of raw cashews in water for at least 4 hours, then drain and rinse.
  2. In a blender, combine soaked cashews, 1/3 cup maple syrup, 1/4 cup coconut milk, 2 tbsp matcha powder, and a pinch of salt. Blend until smooth.

  4. Press the crust mixture into the bottom of a springform pan evenly and freeze for 10 minutes.
