Ingredients

  • 250ml water
  • 60ml vegetable oil
  • Pinch of salt
  • 150g all-purpose flour
  • 150g aquafaba (chickpea brine)
  • 2 ripe bananas
  • 100g peanut butter
  • 200ml coconut cream
  • Dark chocolate (for drizzling)
  • Crushed nuts (for topping)

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a saucepan, combine 250ml of water, 60ml of vegetable oil, and a pinch of salt. Bring to a boil.
  3. Once boiling, remove from heat and add 150g of all-purpose flour, stirring rapidly until a dough forms.
  4. Allow the dough to cool for a few minutes, then add 150g of aquafaba (chickpea brine) one tablespoon at a time, mixing well until smooth.
  5. Transfer the dough to a piping bag, cut the end, and pipe small rounds onto the prepared baking tray.
  6. Bake for 25-30 minutes or until golden brown and puffed up. Leave the oven door slightly ajar to cool.
  7. For the filling, blend 2 ripe bananas with 100g of peanut butter and 200ml of coconut cream until smooth.
  8. Carefully cut the tops off the cooled puffs and fill them with the peanut butter banana cream.
  9. Drizzle with melted dark chocolate and sprinkle with crushed nuts if desired before serving.
