Laminated vegan pastry filled with spiced pumpkin custard, perfect for autumn gatherings and cozy occasions.

Vegan Pumpkin Spice Danish is a scrumptious pastry that perfectly captures the essence of fall. This delightful treat pairs flaky layers of laminated dough with a rich and creamy pumpkin custard, spiced exquisitely with traditional autumn flavors such as cinnamon and nutmeg. Ideal for cozy mornings or as a sweet indulgence during any gathering, these danishes are not only vegan but also a great way to share the warmth of the season with friends and family. Whether served with coffee during brunch or as a dessert after dinner, a Vegan Pumpkin Spice Danish will surely impress.

The origins of pumpkin spice as a flavor can be traced back to the traditional pumpkin pie made by early American settlers. However, the laminated pastry technique is more European, particularly French, where puff pastry is a staple in many desserts. The fusion of these two culinary traditions creates a unique pastry that celebrates both the flavors of autumn and the elegance of classic baking. The filling, made primarily from pumpkin puree, gives a nod to its smooth texture and flavorful impact, making this danish a seasonal favorite.

This Vegan Pumpkin Spice Danish is perfect for various occasions. Whether it’s a weekend brunch with friends, a cozy family gathering at home, or even a festive Thanksgiving dessert, this pastry fits right in. It brings warmth and cheer to holiday celebrations and can also be a delightful treat to enjoy on a chilly autumn afternoon. You can easily serve it alongside a warm beverage for added comfort, making it a versatile addition to any menu.

Instructions

  1. Begin by making the laminated dough. In a large bowl, mix flour with a pinch of salt and sugar. Gradually add in cold vegan butter, mixing until crumbly.
  2. Add cold water a tablespoon at a time until a dough forms. Knead lightly, wrap in plastic, and refrigerate for 30 minutes.
  3. Roll out the dough to a rectangle on a floured surface. Fold it into thirds, then roll it out again. Repeat this process three times to create layers.
  4. For the pumpkin custard, blend pumpkin puree with coconut milk, sugar, cornstarch, cinnamon, nutmeg, and vanilla until smooth.
  5. Spread the pumpkin custard evenly on the rolled-out dough. Roll the dough tightly to form a log.
  6. Slice the log into individual danish pieces. Place on a baking tray lined with parchment paper.
  7. Brush the top with plant-based milk and sprinkle with brown sugar and cinnamon.
  8. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes or until golden brown.
