Ingredients

  • 200g all-purpose flour
  • 150g sugar
  • 2 teaspoons baking powder
  • 2 large eggs
  • 120ml milk
  • 60ml vegetable oil
  • Zest of 1 yuzu
  • 60ml yuzu juice
  • 60ml honey

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and flour a 9-inch square baking pan.
  2. In a large mixing bowl, whisk together 200g of all-purpose flour, 150g of sugar, and 2 teaspoons of baking powder.
  3. In another bowl, combine 2 large eggs, 120ml of milk, 60ml of vegetable oil, the zest of 1 yuzu, and 60ml of yuzu juice.
  4. Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the honey glaze by mixing 60ml of honey and 30ml of yuzu juice in a small saucepan over low heat until warm and combined.
  8. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes.
  9. Transfer the cake to a wire rack, drizzle the warm honey glaze over the top, and let it soak in.
  10. Allow the cake to cool completely before slicing into squares and serving.
